    4 T. cider vinegar
    4T. rice vinegar
    1 T. sugar
    1 tsp. dry mustard
    1 T. olive oil
    1/2 tsp. salt
    Freshly ground pepper to taste
    1/3 cup diced red onion
    3-1/2 cups cooked black-eyed peas, rinced
    2 cups cooked black beans, rinced 6 cups fresh green beans, trimmed and cut into 10inch pieces or can use frozen, thawed
    2 T. chopped fresh parsley


Cook green beans in boiling water until just tender. Drain and place in cold water; drain and repeat until beans are cool. Combine all ingredients in a medium sized bowl. Makes about 7 cups.
