Ingredients

    2 lbs chuck beef
    3 large onions, peeled and diced
    1/2 cup all purpose flour
    1 (101/2 oz. can) beef consomme, undiluted
    1/4 cup plus 2 tbls chili powder
    1 tsp ground cumin
    1 1/2 tsp ground oregano
    1 tbls salt

Directions

Combine beef and onions in a large Dutch oven. Cook until meat is browned and onions are soft. Drain off fat. Stir in flour and cook 2 minutes, stirring constantly. Gradually add consomee, stirring constantly. Stir in chili powder, salt, cumin and oregano. Simmer, uncovered, 30 minutes or until thickened, stirring occasionally. Makes 4 servings.
