Ingredients
-
1/3 cup nuts(peanuts,cashews,almonds,walnuts..anything goes!)
1/2 cup chopped dates
1 tbsp unsweetened dark cocoa powder
Directions
1.Place peanuts in blender. Pulse until you get them broken up. (not until powdery! you want a bit of crunch in there)
2.Transfer peanuts to a bowl. Blend dates until it forms a paste.(this might take a while). Add cocoa powder.
3.Line your work area/table with cling wrap. Dump in both peanuts and dates. Mix by squishing the dough by using the cling wrap.(super sticky dough here!)
4.Shape as you wish.(balls,cookie cutter,bars,squares..)
***you can put a bit more cocoa powder in a small sieve and sieve it over the bars. SO GOOD!
**dont be worried about the bitterness of cocoa because the caramel-sweetness of the dates offset this.
*makes roughly 3 larabar sized bars
*place in fridge to firm it up
Feel free to experiment with different nuts and you can mix dry cherries or raisins/currants in there. Spices like cinnamon/nutmeg/cardomom are excellent additions. Add a little lime juice or lemon juice for added goodness.
