Ingredients

    3 lbs pork tenderloin
    3 Tbsp dijon mustard
    6 Tbsp low-sugar apricot jam
    salt and pepper to taste

Directions

Mix the mustard and jam together, and brush over tenderloin.

Cook tenderloin on the low setting for four hours, or until it reaches a temperature between 155 and 165.

Slice and serve over rice, polenta, or pasta (not included in this recipe).

Makes 8 6 oz (uncooked) servings.

    This is so insanely good. I put in some chicken broth. I also added carrots, turnip, and red onions. It was soo good. Adding onions is so worth it, the onions absorbed the sweetness of apricot, extremely delicous :) - 9/15/11
