Ingredients

    2 lb Pork Loin Roast, Center Cut
    1 cup Onions, chopped
    1 cup Celery, chopped
    1 cup Bell Pepper, Red Raw
    1 can Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added
    1 cup Swanson Chicken Broth 99% Fat Free
    2 tsp Garlic minced

Directions

Rub what ever spices you wish to use [I used Garam marsla, Five spice, black pepper and red pepper flakes] on the roast. Then in a pan that is very hot and sprayed with cooking spray, brown the roast all the way around.
Place the roast in your slow cooker which you have preheated on high. Put the onion, celery, bell pepper and pineapple on and around the roast. Use the broth to get the goodies out of the pan where you browned the roast and add it all to the slow cooker. Sprinkle the minced garlic on top of everything else so that it does not burn.
Cook until meat is fork tender. Spoon over brown rice to serve. Makes 8 servings.
