Introduction

Number of Servings: 8

Ingredients

    3 medium red potatoes
    1 small white onions
    3 large eggs
    3 egg whites
    1/2 c Olive Oil

Directions

Crack eggs and egg whites -- combine and mix until frothy.

Slice potatoes and onion thinly.
Heat olive oil reserving 2 T.
Place a layer of potatoes followed by a layer of onions etc.
Cook until potatoes are soft but do not brown, remove the potato/onion mixture -- drain oil in a colander.

Combine the egg mixture and the potato/onion mixture.
Add remaining 2T of oil to pan, heat. Add egg mixture cook until browned.
