Ingredients

1 lb. gemelli (or other short, twisted pasta)
½ C pine nuts
¼ C frozen corn
10 oz. chicken (optional)
½ lb asparagus
2 T chopped fresh rosemary
2 T apple cider vinegar
Salt and Pepper to taste
6 T honey
3 T Dijon mustard
Juice and zest of ¼ orange
½ C olive oil
½ C cranberries (craisins)
Directions
Cook pasta according to directions.
Thaw corn.
Cook chicken (whatever method you prefer). When cool, cut into ½ inch cubes.
Blanch asparagus until desired doneness; drain and cool; then slice into 1 inch pieces.
In a large bowl, mix rosemary, salt, vinegar, pepper, honey, mustard, orange juice, and olive oil.
In another bowl, combine pasta, pine nuts, thawed corn, chicken, asparagus, orange zest, and cranberries.
When well mixed, add to bowl with dressing and toss to combine.
Makes 8 generous servings.
