Number of Servings: 12

Ingredients

    1 large can of tomato juice (with salt)
    1 can of crushed tomatoes
    2 cans of chicken broth (and two cans of water)
    1/2 box of whole wheat noodles (around 200 grams)
    1 cup carrot chopped
    1 cup of onions chopped
    1 cup celery chopped
    1 cup red onion chopped
    cilantro, salt and pepper to taste. I also added oregano.

Directions

Makes 12 1 cup servings.

Saute vegetables in pam to soften
add chicken stock, tomato juice and crushed tomatoes

when cooked through... add the noodles.. cook until noodles are soft

serve
