Number of Servings: 4

Ingredients

    -1 cup fat free sour cream
    -3 tablespoons diced scallons
    -2 tabelspoons dijon mustard (any mustard will do)
    -2 teaspoons lemon juice
    -1 teaspoon garlic powder
    -1/2 teaspoon black pepper
    -1 1/2 lbs salmon fillets

Directions

1) Mix sour cream, scallon, mustard and lemon juice in mixing bowl

2) Preheat oven to 400 degrees

3) Lightly coat baking dish with cooking spray

4) Place salomon skin side down in prepared baking dish and sprinkle liberally or to taste with pepper and garlic powder

5) Coat fish with sour cream sauce

6) Bake salmon at 400 degrees until just done- about 20 minutes

    My husband and I love salmon and this was great. I was out of lemon jce so I used lime juice and it was great. I kept some of the cream mixture and put on top of the filets when serving. - 2/21/08
