    1 lb whole milk ricotta
    1/2 c fresh parmigiano-reggiano
    1 c flour
    2 t salt
    1 large egg, beaten slightly in small bowl

    Combine all ingredients in large bowl except 1/2 c flour
    Mix together with hands until forms a ball. Put dough on wooden board and sprinkle with remaining flour, knead until no longer sticky.

    Break out into small balls, about a handful. Roll into strips and cut into 1 inch pieces.

    Sprinkle with flour and spread on platter until ready to boil or freeze until ready to cook.


Cook in boiling water until floating.

    This has got to make more than 1 serving. Lets say it makes 25 gnocchi. That would be only 65 Calories each. Please let us know how many it really serves. - 12/11/09

  • Can the author of this recipe fix it? I'm going to have to figure this out. I agree this must make a lot more. I'm going to make it i guess just to get the correct nutritional information. - 2/2/15
