Ingredients

8 ounces firm tofu, 1 block
1 1/2 garlic cloves, peeled and sliced thin
1/8 of a cup red bell peppers, diced
1 tablespoon olive oil
3/8 cup green onions, sliced or 1/4 cup onions
1 teaspoon soy sauce
1/8 cup salsa
cilantro fresh
2 corn tortillas
Directions
1. Drain the tofu and crumble it, using clean hands.
2. Sauté the garlic and diced pepper with the olive oil in a medium sauté pan on medium heat, for about 2 minutes.
3. Stir in the crumbled tofu first, then salt, pepper, green onions (scallions, chives or onions) and soy sauce.
4. Cook the tofu for 3 more minutes, stirring occasionally.
5. Right before it is done add a palm full of fresh, rinsed cilantro-mix it in well so that softens and flavors the tofu.
6. Salt and Pepper to taste
7. Serve with salsa and warm corn tortillas.
You can vary the recipe by adding jalapeno peppers intsead of the red bell peppers if you want that TEXAS kick! Start off with only a few slices, if you are brave-add more...Enjoy!
