Ingredients

8 slices Healthy Family Whitewheat Bread
1 c. Blueberries
2 c. Skim Milk
1 c. Egg Substitute
1.5 c. Splenda (equal measure)
1 tsp. Vanilla Extract
1/4 tsp. Ground Cinnamon
14 Caramels
1/4 c. Skim Milk
Directions
Preheat oven to 400 degrees.
Spray an 8"X8"X2 inch baking pan with cooking spray. Cut the bread into approx. 1 inch cubes and drop into prepared pan. Sprinkle in the blueberries and set aside.
In a large bowl combine 2 cups of skim milk, the egg substitute, Splenda, cinnamon and extract and stir. Pour the liquid mixture over the bread and berries.
Place the pan into a 1" water bath and bake for 1 hour or until a knife inserted, comes out clean.
Make the Caramel Sauce by melting the Caramels in a very small sauce pan with the remaining 1/4 c. of Skim Milk. Stir frequently until bubbly. Spoon over pudding when slightly cooled.
