Ingredients

    Wheatberry, 1.5 cup
    Lentils, .75 cup
    Onion - Raw, chopped, 1 cup
    Walnuts, .3 cup, chopped
    Celery, raw, .5 cup, diced
    Carrots, raw, .4 cup, chopped
    Green Onion, Chopped, 0.5 cup
    Parsley, Dried, 2Tbs.
    Sesame Seeds, 3 tbsp
    Apples, fresh, .5 cup, quartered or chopped
    Cranberries, dried, sweetened (craisins), 0.5 cup
    Garlic powder, 2 tsp
    Pepper, black, 1 tbsp
    Salt, 1.5 tbsp
    balsamic vinegar, 6 tablespoon

Directions

Bring 5 cups of salted water to a boil. Add wheat berries and lentils and reduce heat to a simmer uncovered for :45 minutes.

Combine 2 Tbs olive oil, garlic powder, salt, pepper, parsley and vinegar. Reserve, to allow the herbs and seasonings to rehydrate.

Saute onions in 2Tbs. olive oil until translucent, remove from heat and add the above dressing to the hot onion mixture, allowing the flavors to come together.

In a colander, rinse wheat berries and lentils in cool water to remove excess starch.

In a large mixing bowl, combine all ingredients together and allow it to rest, covered, at room temperature for :30 minutes. Season with salt and pepper to adjust.
