Introduction

Ingredients

    12 Hard Boiled Eggs
    16 slices Bread (Great Value Wheat), toasted
    1 stick Butter
    1/2 cup Flour
    4 cups Milk, 2%
    1 tsp salt
    1/4 tsp pepper
    10 oz ham, processed finely and microwaved for 4 min
    1-1/4 cup cheddar cheese, shredded

Directions

1 - Heat a large pot with water to boiling. Slowly lower eggs into the boiling water with a large serving spoon. Boil for 15 min.

2 - Meanwhile grind the ham in the food processor and set aside.

3 - When the eggs are done boiling, Immediately place the pot under cold running water for about 5 min to cool the eggs. Peel the eggs under running water (use a colander to catch the shells for convenience).

4 - Cut eggs in half. Remove yolks and grind in processor just a touch (just till crumbly, don't let them get mushy); set aside.

5 - Dice egg whites; set aside.

6 - In saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Add milk slowly, whisking constantly. Bring to boil; cook and stir for 1-2 minutes or until thickened.

7 - Stir in the egg whites, ham & cheese; heat through.

8 - Place toast on individual serving plates (2 slices per serving). Pour sauce over toast.

9 - Sprinkle the yolks evenly over all.
