Introduction

A good leftover Thanksgiving turkey use-up. A good leftover Thanksgiving turkey use-up.
Number of Servings: 12

Ingredients

    2c turkey
    1c carrots
    1/2c celery
    1 small onion
    3 cloves garlic
    1c corn kernels
    2c cut green beans
    1 1/2 quarts chicken broth
    6 cups mashed potatoes
    thyme & sage to taste
    4 TBS corn starch

Directions

Dice all ingredients. Simmer everything but potatoes with broth until tender. Thicken with corn starch or flour. Place in 15x11 pan and top evenly with mashed potatoes. Sprinkle with cheese if desired (not included in nutritional information). Bake in 350 oven until browned. (about 5 min)

    Very Good
    I live alone so I cut all ingredients by half EXCEPT the turkey. 1 cup was not close to enough! Made mashed potatoes from scratch, forgot spices & melted 2 slices of fat free American cheese (WW) while in the oven. 1 word: DELISH! Had to bake for 15 minutes. Next time will make w/ saitan. Thanks! - 12/3/10
