Introduction
Most waffle recipes call for lots of eggs and butter. This old-fashioned recipe calls for just one egg and a scant amount of light margarine. While waffles may never be the healthiest breakfast treat, at least this recipe helps! Most waffle recipes call for lots of eggs and butter. Ingredients

1-1/2 c. unbleached all-purpose flour
1-1/2 t. baking powder
1/4 t. salt
1-3/4 c. 1% milk
1 egg, beaten lightly
2 T. light margarine, melted
Directions
Whisk together dry ingredients.
Add milk slowly, beaten egg and melted margarine.
Beat batter for 2 minutes and drop by spoonfuls onto a well greased hot waffle iron.
Bake until steaming stops.
Remove waffle from iron and keep warm until ready to serve.
Serve with light or sugar-free syrup, low-sugar or sugar-free preserves, or fresh fruit.
One serving equals two 4" square waffles.
