Ingredients

    2 c whole wheat flour
    1 1/3 c quick or old fashioned oats
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1 c (2 sticks) butter, softened
    1 c packed brown sugar
    1 c Splenda
    1 c solid pack canned pumpkin
    1/4 c egg substitute
    1 tsp vanilla extract
    3/4 c. dark chocolate chips

    Preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper.

    Combine flour, oats, soda, cinnamon, and salt in medium bowl. Beat butter, brown sugar, and Splenda in large mixer bowl until light and fluffy. Add pumpkin, egg subsitute and vanilla; mix well. Add Flour mixture; mix well. Stir in chocolate chips. Drop by rounded tablespoons onto prepared cookie sheets.

    Bake for 14-16 minutes or until cookies are lightly browned and set in the centers. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
