Introduction
My husband needed a high-protein breakfast that he could just microwave on his way out the door each morning. Since I have 4 boys under the age of 7, this is a great way to eat fast and fresh. Ingredients

Pam butter spray
Bacon, 4 medium slices
Red Potato, 3 medium diced, skin on
Carrots, raw, .25 cup, chopped
Celery, raw, .25 cup, diced
Salt & Pepper to taste
1 Bouillon cube, chicken flavor,
1 cup chopped fresh spinach
Egg, fresh, 14
1/2 cup skim cottage cheese
1/2 cup skim milk
Directions
Cook bacon until crisp. Drain and chop and set aside. Dice vegetables and cook with Pam until lightly browned. Add salt and pepper and crumbled bouillon cube while cooking. Set aside and let cool. Stir eggs, add milk until fluffy. Add cottage cheese. Spray 9 x 13 baking dish with pam. Add cooked vegetables then the spinach, chopped. Add bacon on top then pour on the egg mixture.
Bake for 45 minutes at 325. Once out of the oven let it cool then slice it into 10 servings. Freeze each one in a zip baggie. Do not put in the freezer hot because this will make too many ice crystals and your eggs will be slimy. Do not close the zip baggie while it is cooling. This will not form enough ice crystals and will make the eggs rubbery.
To re-heat, remove from zip baggie and place on a microwave safe dish at full power for 1 minute. Serve with salsa on the side if you like.
