Introduction

A delicious way to get your dark green leafy veggies in. My friends asked for the recipe when I served it. It keeps for several days, dressed, because kale is so robust. Note that I've modified Martha's recipe to use Better than Peanut Butter -- cuts down on the fat and calories while still keeping the essence of the dish (though it is better with the peanuts). Ingredients

    1 bunch kale, chopped and cores removed
    2 carrots, chopped into coins
    1 bell pepper, preferably red, yellow, or orange (optional)

    Dressing:
    .25 cups canola or vegetable oil
    2 Tbsp Better than Peanut Butter
    .25 tsp salt
    dash hot sauce, if desired

    Garnish:
    .125 cups chopped roasted salted peanuts if desired

Directions

Tear kale into small pieces, removing tough parts of stems, and chop carrots (and optional bell pepper) into coins.

In small bowl, combine oil, cider vinegar, better than peanut butter, and salt. Blend with hand blender to combine. Taste, and add additional agave syrup, salt, or a dash of hot sauce if desired. Pour over salad.

Chop remaining .25 cups peanuts and sprinkle over salad. Serve in an attractive bowl.
