Introduction

A great way to use up leftover turkey after the holidays. Tastes great on a baked sweet potato and adds alot of fiber and vitamins. Also, good with non fat cheddar cheese. Ingredients

    3.5 cups of turkey, shredded
    1 c black beans, from the can partially drained
    1 c red kidney beans from the can partially drained
    1 1/2 c chopped sweet vidalia onions
    1 lrg carrot, chopped
    1 c broth from turkey
    1 Tbls turkey drippings
    2 tsp cumin
    2 tsp chili powder
    1 1/2 Tbls minced garlic
    1 can Rotel or tomatoes with chiles
    2 Tbls red salsa
    1 10 oz can plain tomato sauce
    1 c water

Directions

Coat bottom of large pot with oil.
Saute onions for until almost clear.
Add cumin, chili powder and garlic and saute another 30 secs.
Add meat, coat with spices and cook another minute.
Add rest of ingredients, except tomato sauce.
Bring mixture to a low boil for a couple of minutes, probably on medium or medium high, uncovered.
Add tomato sauce, stir, lower heat and cover. Let simmer for about an hour.

Serves aprox 6.
