Ingredients

    Artichoke hearts quartered
    tomato diced
    extra virgin olive oil
    onions
    garlic
    whole wheat spaghetti or other pasta
    mozarella cheese or parmesan cheese

Directions

Boil pasta;

saute garlic and onions in olive oil; add artichoke hearts and tomatos in sauce pan until heated through.

serve over pasta with sprinkling of mozarella or parmesan cheese.

VERY High in fiber and satisfying lunch.
