Ingredients

2 large red potatoes
1 medium onion
3 carrots
3 cloves of garlic
2 tbsp sesame oil
1 box of Golden Curry sauce mix hot
2 cups of water
1 lb of boneless skinless chicken breast
Directions
Before beginning; I start a rice steamer with some jasmine rice. Best served over rice.* If you choose to have rice, start which ever kind you choose, first.
-Heat a wok (or large skillet) with 1/2 the sesame oil over medium heat
-add all garlic
-Wash and slice the potatoes into 1/4 inch slices, then slice in half; add to the wok; toss 3-4 times to mix oil and garlic in
-peel the carrots, remove ends, and cut diagonally into 1/4 inch slices; add to wok and stir generously to mix in
-cut the onion into thirds across the peels, then cut into 1/6ths. Should resemble large wedges. Add, whole, to the wok; add to wok and stir again
-add remainder of sesame oil and stir again
-cut the chicken into 1/2 inch cubes; add to wok and stir again
-cut the curry sauce mix (its dried) into large cubes and add to wok; stirring frequently
-add 1 cup of the water and stir heavily
-let simmer for about 5-10 mins; stirring frequently
-add the remaining water; continuing to stir
-turn the heat down to medium low
-continue stirring until potatoes have gone soft
At the point that the potatoes are soft, the chicken should be done (make sure it is). Once the chicken is done, serve over rice.
