Ingredients

Rub
1 tsp ground cumin
.5 tsp rubbed or crumbled sage
.5 tsp ground ginger
.25 to .5 tsp freshly ground pepper
.5 tsp salt

1 lb boneless, skinless, chicken breast, all visible fat removed
1 tbsp acceptable vegetable oil
3 tbsp lemon juice
1 tbsp honey
1 tbsp light soy sauce
Directions
Serves 4; 1 cup per serving
In a small dish, combine rub ingredients. Rinse chicken and pat dry with paper towel. Rub mixture all over chicken. Cut into about .5 inch strips.
Heat a large skillet (perferably nonstick) over medium-high heat. Add oil and swirl to coat bottom of skillet. Cook chicken until nearly cooked through, 3 to 5 minutes, stirring often.
Meanwhile, in a small bowl, whisk together remaining ingredients. Stir into chicken, increase heat to high, and cook for 1 to 2 minutes, or until chicken has just cook through.
TIP
If you perfer to leave the breasts whole instead of cutting them into strips, reduce the cooking temperature to medium and increase the cooking time to about 15 minutes before adding the lemon juice mixture.
