I found this recipe on spark, but the nutrition info seemed off. I included counts for 1 ln raw chicken breast and uncooked minute brown rice, so this should be more accurate. Ingredients

1 lb boneless skinless chicken breast, raw, cut into bite size pieces
2 C pineapple tidbits, drained, reserve 1/4 cup juice
1 C chopped green pepper
1 C water
1 TBSP cornstarch
2 TBSP cider vinegar
2 TBSP brown sugar
1/8 tsp garlic powder
1/8 tsp dried ginger
1 med. banana, diced
1/4 C slivered almonds
1 C uncooked brown rice
Directions
cook rice according to package directions.
spray skillet with coking spray, saute chicken over med-high heat until almost cooked through.
stir in pineapple and green pepper.
In small bowl, combine pineapple juice, water, cornstarch, vinegar, brown sugar, garlic, ginger. Stir well.
Add to chicken mixture, cook and stir until thickened and chicken is cooked through.
Fold in banana and almonds, heat through.
Serve over brown rice.

well, I don't take complete credit for the recipe because I only re-posted for more accurate nutritional info. However, it was a hit at our house. I might suggest adding some cayenne to jazz it up a bit. You could at least leave a suggestion for others on how you would make it more flavorful.
