Introduction
Using up some ingredients in the refrigerator such as wine and fresh sage. This is a lower fat, lower carb than an old recipe. My updated version of an old family favorite that had cream of mushroom soup. I will probably only eat half of a serving and save pork, as they are big chops, to slice over a salad tomorrow. Potato, raw, 2 large (3" to 4-1/4" dia.)
Pork Chops (pork loin), roasted, 10 oz
Pepper, black, 1 tsp
White Wine, 2 fl oz

Directions
Preheat non stick skillet on medium low. Spray the pan and t he 5 qt crockpot with Spray Canola. I found I needed a tablespoon of canola added to the pan when i browned the pork loin chops.
1. Slice the onion and saute' on medium low to soften and slightly caramelize. Remove to a plate or bowl.
2. While cooking the onion, slice the potatoes [don't need to peel away the vitamins, and place in an even layer in the bottom of the crock pot.
3. Trim the pork loin of excess fat. Turn the skillet up to medium high. Set the timer for two minutes and add the loin to the pan. Pepper the side that is up. At 2 minutes turn the pork, and pepper the side that is up. Set time for last 2 minutes.
4. Remove the pork loin chops & place on top of the potatoes. "Deglaze" the pan with a little wine if you have it. Can substitute water or broth. Pour over the pork chops.
5. Place fresh sage leaves over the pork chops [if available].
6. Spread the sauteed onions over the chops.
7. Sprinkle the canned mushrooms over this.
8.Add the broth.
9. Place the frozen green beans in the refrigerator to at least partially thaw.
Know your crock pot. You may need more liquid.
Turn on the crock pot: High for 4 hours. Low for 8 hours
One hour before serving, add the green beans over the top. Can use tongs to mix a little with the onion & the mushrooms with the beans.
