Ingredients

2 lbs London Broil, fat trimmed off
2 cups fresh baby onions (or chopped regular onions)
1.5 cups fresh chopped msuhrooms
1 lb. baby potatoes
1 cup baby carrots
1.5 cups nonfat milk
2 tablespoons butter
2 tablespoons whole whet white flour
salt to taste
Directions
Spray Pam in a large slow cooker and put in the London Broil. Place chopped onions on either side of it.
In a small saucepan, melt butter and added flour. Stir with a whisk to make a roux and cook for a minute or so. Add milk and stir until thickened. Add slat and pepper to taste. Stir in mushrooms (don't need to cook them) and carrots and potatoes. It will be a thick mix. Pour on top of the meat and onions.
Cook for 6-8 hours on low heat. As the mushroom cook, they will add more liquid.

The meat turned out great. Unfortunately, the potatoes and carrots were still a bit raw after 8 hours in the slow cooker. I will make the meat again with the sauce, onions and mushrooms but cook the potatoes on the stove. I put it together and let it cook overnight for lunches the next day. - 9/24/14
