Introduction

This recipe is a great side dish with a lot of flavor and it is quick to make. It is low in calories but very satisfying. Add chicken or shrimp to make it a main dish. This is the first time I have written ingredients down- I usually eyeball the vegetables so adjust accordingly if you see fit. : ) I will add photo next time I make it. Ingredients

    1 cup Orzo, cooked according to package directions
    1/2 cup purple onion, chopped
    1/2 cup red bell pepper, chopped
    1/2 cup yellow bell pepper, chopped
    1/2 cup green bell pepper, chopped
    3 oz. fat free feta cheese
    1/2 cup kalamata olives, sliced
    1 teaspoon Cavender's Greek Seasoning
    3 tablespoons Seasoned Rice Wine Vinegar


Directions

Cook Orzo Pasta according to package directions.
Saute all vegetables in 3 tablespoons rice wine vinegar until they are soft and shiny.
Mix vegetables, olives, feta, and Cavender's Seasoning with Orzo.
Salt and Pepper to taste.
Enjoy!
