Ingredients

    1 to 1.5 lbs of extra lean ground beef
    1 med. onion chopped
    1.5 tsp minced garlic
    2 large carrots, chopped
    1 pkg taco seasoning - sodium reduced
    1 lrg potato, cubed
    2 med stalks celery, sliced
    1 c chickpeas, drained
    1 - 28oz can diced tomatoes

Directions

Brown ground beef , drain. Add onion and garlic- cook till onion is limp. Transfer to Crock Pot.
Add remainder of ingredients to pot
Cook on Low for 8 hours
Serve with a side salad
serving size is 1 cup
