Ingredients

3 boneless, skinless chicken cutlets
2 egg whites
1 tsp lemon juice
1/2 tbsp Land o Lakes butter with canola oil
1/4 cup whole wheat flour
3/4 cup italian seasoned bread crumbs
1 tsp garlic powder
2 tbsp Reduced Fat Parmesan Cheese
1 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 350 degrees. Tenderize/pound chicken breasts until they are about 1/4 inch thick. (you can also marinate them overnight in olive oil and garlic before making this recipe-optional). Trim off any fat. Melt butter in microwave and let cool slightly. Gently beat egg whites and then add melted butter. Immediately add lemon juice, whisk together and put aside. In food storage bag mix bread crumbs, parmesan cheese and garlic powder. Set aside. Put flour in a shallow bowl. Dredge (lightly coat) each of the chicken breasts in flour. Then dip each side of chicken breast in egg mixture. Then drop chicken breast (one at a time) into food storage bag with bread crumb mixture to coat. Heat olive oil in a pan (preferrably non-stick) on medium to medium-high. Cook until each side is golden brown (about 5-8 min each side, depending on heat level of your stove). Finish cooking chicken breasts in oven for about 10 minutes. (check temp with cooking thermometer, should reach 165 degrees internally). Half a chicken breast per person is the correct portion size.
