Introduction

I came up with this recipe a few years ago as a quick treat for my parents. Multigrain pasta and reduced fat feta make it healthier than traditional pasta and whole fat feta. Oven roasting the shrimp gives it a great flavor, or alternatively, use already cooked shrimp if you want to save time. I came up with this recipe a few years ago as a quick treat for my parents. Ingredients

    Eating Right Multigrain Penne Rigate, 1 1/3 cup
    One pound of raw shrimp, peeled and deveined
    Olive Oil Cooking Spray
    2 pinches of pepper
    1 TBSP Olive Oil
    Half a large onion, finely chopped
    Three cloves of garlic, minced
    One can of artichoke Hearts, Canned, chopped
    One cup cherry tomatoes, quartered
    Two cups of fresh spinach, coarsely chopped
    1/4 Tsp of pizza seasoning or other Mediterranean spice blend
    1/2 cup of reduced fat feta cheese

Directions

Pre-heat your oven to 400 degrees. Set a pot of water to boil for your pasta.

Once the water is boiling, add in the pasta. It will take 11-13 minutes to cook. Put your cleaned shrimp on a cookie sheet, spray with olive oil cooking spray and season with pepper.

Meanwhile, heat olive oil in large pan. Saute onion on medium high heat until translucent. Add garlic and saute until golden. Stir in artichoke bottoms, tomatoes and spinach. Season with pizza seasoning and stir.

Meanwhile, put shrimp in the oven. Check frequently - when they are opaque and the tails curled in, they are done! It should take no more than five minutes, and you don't want to overcook them.

Drain pasta, and stir pasta into veggies. Turn off heat, and stir in shrimp and feta.

Serves four.

    Thanks, Terfree! Let me know if you'd suggest me tweaking the portion size any after you make it. I think four servings is right if you're serving a side salad with it, but I'd welcome any feedback.
