Ingredients

    1 tablespoon cake flour

    ½ cup unsweetened cocoa

    1 ounce sweet baking chocolate

    ½ cup boiling water

    1 cup granulated sugar

    ¼ cup packed brown sugar

    3 tablespoons butter or margarine, softened

    2 tablespoons vegetable oil

    ¼ cup plain fat-free yogurt

    2½ teaspoons vanilla extract

    ½ teaspoon coconut extract

    2 large egg whites

    2¼ cups sifted cake flour

    2 teaspoons baking powder

    ½ teaspoon baking soda

    ½ teaspoon salt

    1 cup low-fat buttermilk

    5 cups of sweetned coconut flakes

    2 cups of crushed pecans

Directions

Add all ingredients except for the coconuts and crushed pecans in mixer.

Bake for 70 minutes or until it passes the clean toothpick test. (Insert toothpick in center of cake, cake is done if the toothpick is clean when removed.)

In a pan add crushed pecans and toast for 5-7 minutes to release flavor.

Mix pecans and toasted coconut flakes in bowl.

Sprinkle on top of cooled cake.
