Ingredients

    Spaghetti/Marinara Sauce (tomato sauce), 2 cups

    Eddie's Organic Whole Wheat Rotelli, 16 oz (1 and 1/3 of a package)

    Ricotta cheese, fat-free, 21 oz

    Mozzarella Cheese, part skim milk, 8 oz

Directions

1. Boil water and cook pasta according to package instructions, cutting the cook time in half. The pasta will continue to cook in the oven and get mushy if you overcook it in the pot.

2. In a baking pan, mix cooked pasta, ricotta and sauce. Sprinkle top with half of mozzarella cheese and cover with foil, bake in a 350 degree oven for approximately 15 minutes.

3. Remove cover and sprinkle with other half of cheese, return to oven for an addition 10 minutes or until cheese is fully melted.

Makes 8 1.5-cup servings.
