Very flavorful and easy dish to make! Very flavorful and easy dish to make!
Number of Servings: 10

Ingredients

    6 (6 ounce) white fish fillets
    Spay Oil
    3/4 Teaspoon Salt
    1/2 Teaspoon Black Pepper
    3 Tablespoons Lime Juice
    1 (8 ounce) container of Light Sour Cream,
    1 Teaspoon chopped Parsley
    1 Teaspoon grated lime rind

Directions

Preheat oven to 400.
Coat a 9 x 13 dish with spray oil
Place fish fillets in dish, sprinkle with salt and pepper.
Combine lime juice, sour cream and parsley, stir well.
Pour over fish.
Sprinkle lime rind over fish.
Bake at 400 for 20 minutes till fish flakes easily with fork.
Serve over brown rice.
Makes 10 3-4 ounce servings.

Can substitute plain yogurt for sour cream.

    I'm not a big fan of lime with the fish, I think this would be great with lemon instead. Still a bright flavor. - 1/26/10
