Introduction

My blind German friend's recipe. Diabetic friendly. I made it a smaller version, half size. My blind German friend's recipe. Diabetic friendly. I made it a smaller version, half size.
Number of Servings: 4

Ingredients

    4 oz. light cream cheese, softened
    2 T. splenda
    1 single serving container Fat Free Greek yogurt
    1/3 cup egg substitute
    1/2 box, 4 serving sugar free cheesecake pudding
    1/2 t. almond extract
    6" pie crust (don't think you can buy them, but you can double the recipe using 9" crust if you don't want to make your own crust)

Directions

Make crust and pre cook about 10 min first. Beat up softened cream cheese. Add splenda, beating until smooth, add yogurt (you can use low fat sour cream) continuing to beat, then egg substitute. Beat in pudding mix (you can use sf vanilla) and almond extract. When smooth, place in prebaked shell and bake 30-35 min until set.
