Ingredients

    1.5 cups dark salad mix
    1/2 cup organic 3-beans (pinto, black & kidney)*
    1 cup of diced tomatoes with lime and cilantro*
    2 oz Weight Watchers Mexican shredded cheese (optional)

Directions

Layer dark salad mix onto plate first, and top with mixture of organic beans and diced mexican tomatoes, warm or cold. Top with low-fat shredded cheese (optional) for a comfort food that is healthy!

*To save on sodium, prepare beans and tomatoes yourself instead of using canned.
