Ingredients

    1 pkg. Extra lean ground turkey (Jennie-o)
    1 jar Newman's Own Marinara Sauce
    1 can Hunt's diced no salt Italian seasoned tomatoes
    1 15 oz. container light ricotta cheese
    1 egg, beaten
    1 12 oz. pkg. extra fine spinach, thawed and well squeezed
    10 whole wheat lasagna noodles (broken to fit pan)
    1/4 cup Parmesan cheese reduced fat
    1 3/4 cup mozzarella cheese, part-skim

Directions

Preheat oven to 375. Brown turkey in skillet until no longer pink. Add Italian sauce and tomatoes, stirring until well mixed. Set sauce aside. In a medium sized bowl mix ricotta cheese, beaten egg, Parmesan cheese and drained spinach. Blend evenly. Spray a 13x9 baking dish. Into spayed dish, put two cups of meat sauce. Layer 5 noodles on top of the sauce. Spread the entire amount of ricotta mixture on top of noodles, then sprinkle with 1 cup of the mozzarella cheese. Spread 1 1/2 cups of meat sauce over cheese. Layer remaining noodles on meat sauce, pressing lightly into the sauce. Top with the remaining meat sauce. Place, uncovered, in 375 oven for 45 minutes, or until noodles are tender. Remove from oven, and sprinkle with remaining 1/2 cup of mozzarella cheese; cover with aluminum foil. Let sit for 15 minutes, then cut and serve. This recipe makes 10 generous servings.
