Introduction

This is the best recipe I've ever seen for scalloped potatoes and ham. It takes awhile to make the sauce, but it's well worth the extra effort. This is the best recipe I've ever seen for scalloped potatoes and ham. It takes awhile to make the sauce, but it's well worth the extra effort.

Ingredients

    2 C Cooked Ham, cubed
    1/4 C Onion, chopped fine
    1/4 C Butter or margarine
    1/4 C Flour
    2-1/2 C 2% Milk
    5 Large Potatoes, thinly sliced
    1-1/2 t Salt
    1/8 t Pepper

Directions

To make sauce, cook onion in butter till tender but not brown. Stir in flour, salt and pepper. Add milk, Cook and stir until thickened and bubbly. (this took me about 40 minutes on medium for a double recipe) Cook and stir 1 to 2 minutes more. In a 2 quart casserole place 1/2 of the cubed ham and half of the sliced potatoes. Cover with half the sauce. Repeat layers. Bake covered in 350 degree F oven for 45 minutes. Uncover, bake about 30 minutes more or till potatoes are done.
