Introduction

I make these every fall for my family and sometimes substitute agave nectar for the sugar, or replace the white all purpose flour with whole wheat to make things a little healthier. Ingredients

    3 cups sugar
    1 cup oil
    4 eggs
    2tsp vanilla
    3.5 cups flour
    1.5 tsp salt
    2 tsp cinnamon
    1 tsp nutmeg
    2tsp baking soda

    2/3 cup milk
    1 3/4 cup pumpkin


Directions

Sift dry ingredients together. Mix wet ingredients. Add wet ingredients to dry and mix thoroughly. Alternating and gradually, add the milk and pumpkin until well blended. Pour into muffin pans, and bake at 350 for 20 minutes.
