Ingredients

    1 cup brown rice
    1 tsp olive oil
    2 cups water
    2 tsp dry onion
    1 tsp minced garlic
    1/4 tsp dry ginger

    1/2 lb bacon, cut, cooked, drained
    1 cup diced carrot
    1 cup diced celery
    2 Tbsp bacon drippings
    2 tbsp soy sauce

Directions

Cook rice, cool.

Cook and drain bacon.

Saute veggies in 1 Tbsp drippings; remove.

Fry rice in 1 Tbsp drippings; crack eggs over rice and stir.

Combine all and add soy sauce.

Makes 4 one cup servings
