I'm not a vegetarian, but I have been looking for ways to increase my carbs and protein without increasing my fat intake. I heard somebody mention something recently about "bean chili." I don't know if this is what they meant, but this is what I put together based on my (very popular among my friends and family) chili recipe. Ingredients

    1 Tbsp Olive Oil
    1 Medium tomato, diced
    2 cloves garlic, crushed divided
    1 small onion, diced
    1 can Eden Organic Black Beans
    1/4 tsp McCormick Chipotle Chile Pepper
    1/4 tsp McCormick Ground Cumin
    1/4 tsp McCormick Mediterranean Basil Leaves
    1/4 tsp McCormick Mediterranean Oregano Leaves
    1/2 tsp Badia Chili Powder

Directions

Heat olive oil in skillet over medium heat. Add diced tomato, onion and one clove of garlic. Saute for no more than 5 minutes. Stir in beans and seasoning. Simmer over med-low heat for 5 minutes, just till hot through. Pour into serving bowl then stir in last clove of garlic. Serve hot.
