Introduction

This meatloaf is rich in flavor and moist but holds its shape well. My youngest son was headed for a third slice last night. He didn't even notice how many veggies I had tucked into his meatloaf. :-) This recipe makes two loaves: one for tonight and one to freeze for next week. If you cook both, you have enough left for making meatloaf sandwiches for lunch during the week. This meatloaf is rich in flavor and moist but holds its shape well. Ingredients

    1 medium yellow or white onion, chopped
    1 large bell pepper, rinsed, seeded, and chopped
    6 cloves of garlic, peeled and chopped
    2 small ribs of celery, rinsed and chopped
    2 carrots, peeled and chopped
    2 pounds lean ground beef
    2/3 sleeve of saltines, crushed
    3 eggs, beaten
    1 tsp. each salt, fresh black pepper, and dried thyme
    1/2 tsp. cayenne pepper

Directions

Preheat oven to 350 degrees Fahrenheit. Spray two loaf pans with non-stick spray. Process vegetables in food processor until very finely shredded. Beat eggs in a large bowl. Mix in vegetables and seasonings. Blend in ground beef. Mix very well. Add cracker crumbs. Blend in well. The juices from the processed vegetables should give enough liquid, along with the eggs. You can add a small amount of tomato sauce or ketchup to increase the moisture, if you like. Bake for one hour at 350. Let stand for 10 minutes before slicing. Makes 10 servings. Enjoy!
