Ingredients

1/2 cup black beans (no salt version)
1/2 a chopped shallot (you can use green onions or a small sweet onion if you prefer)
1 clove garlic
1 chopped roma tomato
1/4 tsp ground cumin
pinch of cayenne pepper
1 tbsp salsa
Water
dash of hot pepper sauce
1 tbsp cider vinegar
1 egg

Directions:
Slice shallot and chop garlic and let sit for 5 minutes to bring out their health-promoting benefits.
Bring water and vinegar to a light boil in a shallow pan. Make sure there is enough water to cover egg.
In a separate stainless steel skillet, sauté shallot in PAM over medium heat for about 3 minutes stirring frequently, until translucent. Add garlic, beans, chopped tomato, red chili powder, cumin, while egg water is coming to a boil. Cook bean mixture for about 5 minutes on medium low heat, stirring occasionally.
To poach egg, crack into water and cook about 5 minutes, just until the white is set and the yolk has filmed over. Remove with a slotted spoon, and place egg over beans. spoon salsa on top, and add a dash of hot sauce if you'd like
