A great filling for sandwiches or tortillas. A great filling for sandwiches or tortillas.

    1.5 lbs pork tenderloin, cut into cubes
    1/3 cup vinegar
    2 Tbsp soy sauce
    1 tsp salt
    3 cloves minced garlic
    1 bay leaf
    1/2 tsp pepper
    1 Tbsp sugar
    1/2 cup water
    dash of hot sauce (optional)


Mix all ingredients in overed saucepan, let stand 30 minutes or overnight in refrigerator. Bring to boil over medium heat, let cook 60-90 minutes or until meat is tender. Shred with fork, or use as is.

The leaner the pork, the healthier this recipe is. You can also substitue boneless, skinless chick for half the pork, to reduce fat and calories.
