Introduction

This is so easy to make and great for picky eaters or if you'd like to leave it up to the guests to choose which toppings they'd like. This is so easy to make and great for picky eaters or if you'd like to leave it up to the guests to choose which toppings they'd like.

Ingredients

    2 Cans Cream of Chicken Soup (98% fat free)
    1 Cup Chicken broth or boullion
    1 Chicken breast, cubed and cooked
    2 Cups Rice
    1 Cup shredded cheddar cheese
    1 Can Pineapple tidbits
    1 Chopped tomato
    1 Cup crunchy chow mein noodles
    1/2 Cup sweetened coconut flaked
    2 Tbs chopped shallots

Directions

Cook rice according to package instructions. Meanwhile, in a large saucepan mix together chicken soup, broth or boullion, and cooked chicken cubes. Heat on med-high until hot. Remove from heat.

To serve, start with rice, then add chicken mixture on top of rice. Add tomato, crunchy noodles, pineapple, coconut, and shallots as desired.

    So easy, fast and tasty. Great for a dinner party - people have fun with their toppings. Served over brown rice. For toppings we had green onions, tomoatoes, celery, water chesnuts, red bell peppers, shredded cheese, avocado, pineapple chunks and tibits and chow mein noodles. - 1/19/09
