    1 T. Unsalted Butter
    Half A Yellow Onion (peeled and chopped)
    4 Large Carrots (peeled and chopped)
    3 Large Celery Stalks (chopped)
    1 Boneless, Skinless Chicken Breast (cooked and cubed)
    2 cloves of Garlic (peeled and minced)
    2 tsp Italian Seasoning
    2 Boxes of Organic Low Sodium Chicken Broth
    8 oz. Wide Egg Noodles


Makes 4 very large (about 2.5 C. each) bowls of soup.

Melt butter in large pot over medium heat. Add in onion, carrot, and celery, cooking until tender. Add in chicken, garlic, and seasoning. Heat through. Add chicken broth and increase heat to med-high. Bring to a boil. Add egg noodles and cook until tender. Season w/ salt and pepper, if needed.
