    Olive oil
    Celery, chopped
    Onion, chopped
    Garlic, minced
    Basil, Oregano, Thyme, Rosemary, Black Pepper
    Vegetable Broth
    Canned Diced Tomatoes, including juice
    Canned Lentils, drained and rinsed
    Lemon Juice, fresh
    Baby Spinach, fresh
    Carrots, sliced
    Green Beans
    Corn on the Cob


Heat oil in large saucepan over medium heat. Add onion, celery, and garlic. Cook until softened, approx. 5 minutes.
Stir in seasonings, broth, tomatoes, lentils and lemon juice. Bring to a boil and add other vegetables such as carrots, beans and corn. Cook until vegetables are tender. Add spinach in the last few minutes.

Makes about 10 16-ounce servings, depending on how much water you add to the pot.
