    6 eggs
    2 c nonfat milk
    1 c shredded light feta
    2 tbs olive oil
    1 red onion, sliced
    dash cayenne pepper
    dash of thyme (optional)
    1 tbs chopped chives (optional)
    salt and pepper to taste


Makes 8 servings (each 1/8 of a 9in pie plate)

Heat oven to 350F

Coat a 9in pie plate with light cooking spray

Warm milk slightly over the oven or in the microwave

Place oil in pan and cook onions until golden, stirring often

Mix milk and eggs in a bowl
Add cheese, salt, pepper, dash cayenne
Add onions

Pour into pie plate
Place pie plate on a cookie sheet or metal tray if you want to prevent spillage
Cook 40 minutes...
