Ingredients

    1 chicken breast, boneless, skinless
    1 cup broccoli, chopped
    1 cup carrots, chopped
    1 small onion, chopped
    2 garlic gloves
    1 dash black pepper
1 dash salt (I use a low sodium)
    1/2 tsp cumin seed
    1/2 tsp coriander
1/2 cup green bell pepper, chopped
    3-4 cups tap water
    2 medium potatoes, diced
    cilantro to taste

Directions

In a medium saucepan put the water to boil, add chicken breast, garlic, onion, pepper, balck pepper/salt, with the coriander, cumin seed, and the cilantro.
Boil until you can't see any pink flesh on the chicken.
Take the chicken breast out, chop and the add the broccoli, carrots and potatoes.
Let the vegetables and the potatoes cook and when ready serve in a bowl for main course or in a cup as an appetizer before lunch or dinner. You can even take it as a snack!

This soup is VERY healthy, no added fat and lots of veggies. It has a very thin broth, so is best served with bread. I loved the flavour! - 3/23/07

Soup was simple to make and good. I made double recipe. Only con was needed a lot more seasoning for my taste, but I would make it again and season it up again. - 2/28/17
