Introduction

Quick and easy if you use pre-cooked shrimp. Quick and easy if you use pre-cooked shrimp.
Number of Servings: 6

Ingredients

    3 tbl butter
    3 tbl olive oil
    6 large cloves garlic minced
    1 lb mushrooms sliced
    2 tbl tomato paste
    1/4 cup dry whit wine
    1/4 cup fresh lemon juice
    1 lb medium shrimp
    1 bunch green onion sliced
    1 lb bay scallops
    1/3 cup julienned fresh basil

Directions

Melt butter and olive oil in heavy skillet over medium heat. Add minced garlic and saute 1 min. Increase heat to high and add muchrooms and saute until just begining to soften, about 5 min. Add tomato paste and stir 30 seconds. Add wine and lemon juice and bring to a boil. Add shrimp and sliced green onions and stir 1min. Add scallops and stir until shrimp and scallops are cooked through, about 3 min. Season to taste with salt and pepper. Sprinkle with julienned basil and serve. Serves 6
