Ingredients

2 Tbsp all-purpose flour
3/4 tsp. salt
1/2 tsp. pepper
3 boneless, skinless chicken breasts
2 1/2 c. mushrooms, sliced
3/4 c. marsala wine (try one from the wine section instead of the cooking wine!)
Directions
Makes 4 servings.
Combine 1/2 tsp salt, 1/4 tsp pepper, and flour in a shallow bowl. Coat chicken breasts with flour mixture, set aside. In a large nonstick skillet melt 1 T. butter over med-high heat. Add chicken, cook until browned and cooked through. Remove from skillet, set aside and keep warm. To same skillet add mushrooms and remaining salt and pepper. Cook, stirring occasionally until mushrooms are browned and softened. Add wine; bring to a boil. Cook until reduced by 1/3 (about 3 minutes). Return chicken to skillet, cook until heated (about 1 minute). Remove from heat. Place chicken on a platter. Stir remaining butter into sauce until melted, and pour sauce over chicken. Serve over pasta.
